The Blue Bird of Happiness Told Me So

This sweet little glass bird took up residence on the lapel of my spring jacket yesterday. We met at the Big Chicken Barn while I was out vintage shopping, and already he has convinced me he needs to stay there.




It's this little bird that convinced me to head home after shopping (even though it would have been much easier to just eat out) and happily toss together some shrimp, spinach, cherry tomatoes and garlic in extra virgin olive oil because it really is much more fun to share a meal with a loved one that you have cooked yourself.



Especially when you add some healthy Barilla whole grain angel hair pasta that you recently discovered they had at the grocery store.



It isn't even dark in color like those other *healthy* ones. I like it a lot!



Then, that same little birdie convinced me I really wasn't too fat to be able to eat some cake. So who was I to argue? I couldn't get my Betty Crocker cookbook open fast enough and turned to the page where the "Busy Day Cake" recipe is found. I baked it in my shell cake pan for 25 minutes and then made a glaze out of confectioners sugar, freshly squeezed lemon juice and pure vanilla extract.



Oh yes, I did add some fresh blackberries to the side before serving. And see? I even saved you a bite too.





So what do you think?




Has this Blue Bird of Happiness found a permanent home, or what?

Hi Lili, Love your blue bird, anything with nature I adore. Looks like you know how to cook . . yum yum, shimp, olive oil, I'm there, that's my kind of cooking. As I have gotten older I enjoy cooking more. When the kids were growing up, never enough time to really cook something fabulous. I was working full time back then, seems like we were always rushing all the time. Well enjoy this weekend in paradise Lili! Sandy:O)

I am nuts about BIRDS, especially sweet little blue birds adorning the lapels of sweet little FRIENDS like you! Lili, you make even a simple meal seem like a feast! I just got home from a long day of STUFF and I could just crawl through this computer screen and gobble up all that delicious looking pasta. And don't even get me started on that CAKE!!! Off to check the movie schedule on TV. It's pizza and popcorn and movie night at our house : ) Enjoy the weekend! xx P&H

I think the bluebird of happiness seems right at home - and gives such good advice. I like the whole dinner idea - and the cake - oh my - delicious. I hope that bite was meant for me - cuz I sure want it. Ben and I baked today - for a five year old he is very good at cooking. He said "dip and level" every time he measured a dry ingredient - just too cute. And the cookies were delicious - we each at two, outdoors in the sunshine.
