Partly Because We Like Egg Salad Sandwiches

Henri will often cook up a dozen of them at a time.


After they are cooled off, peeling them is my job.



Partly because my up-close eyesight catches things like this.


Plus I love it when the shells come off in big pieces. Do you know how to make that happen all the time? Neither do I. It was my lucky day.



All ready for a little salt & pepper, then into the fridge because Henri likes his egg salad chilled.



He also likes it served on a flaky, buttery croissant with a few leaves of baby spinach.



But mostly, the reason for this post is to tell you that I am a very lucky girl today because Henri insisted *we* buy me a new camera. And I love it. And it's not even my birthday yet, but it is FOR my birthday, and no doubt Christmas too. The above are some test shots I took with it, inside, with low light on a rainy day, and without a flash or tripod. Yay!

Yum we also love egg sandwiches and lucky you getting a new camera.

Enjoy photographing everything in sight - which is what I did when Santa bought me mine last Christmas.

What a guy!!! Nice shots. What kind of camera is it? I recently got a Canon Power Shot and love love love it. So much better than my old one - and smaller - it slips right into my pocket so I'm ready for most anything that comes along.

Now I want an egg salad sandwich - all over the world people are eating egg salad sandwiches because of your great photos.

Hooray for your new camera! And for egg salad! The trick for the shells to come off in big pieces is....you ready????....OLD eggs. Yep, the fresher they are, the harder they are to peel. I got this advice straight from a cooking instructor at a little place where I sometimes take cooking classes. So, buy eggs specifically to hard boil....leave them in the back of the fridge and use the others for day to day cooking.....then when they've been there a week or so, boil 'em up! xx Suzanne

Oooh, my hubby loves egg salad sandwiches! Do you think if I made him some he'd buy me a new camera? It's worth a try! I've wanted a new camera for a lloonngg time (or anyway it seems like a long time) to replace my precious little Kodak EasyShare D650!

Oh I love egg salad. And the croissant-spinach-salad combo sounds divine...now I shall have to try that. Love the brown egg color, reminds me of when we used to have our laying ladies and had multi colored piles of eggs including green! :-) (americana hen) The camera must be very very nice. the photos are exceedingly sharp and awesome. I want to get a nice camera one day. Have a great day.

Lili, I love egg salad and surprisingly have never had it on croissant with spinach leaves. Sounds like something I would love.
Just coming back here and reading some old posts because I love it there so much. Also, I saw your beautiful winter scene book on Blurb. Gorgeous!
